In honor of St Patrick driving the snakes from Ireland (probably because they were too drunk to drive themselves)...I made a sweet/hot chicken Balti. In a Staub, natch, because their Dutch ovens are bitchin'.

Prepped the chicken, the veg, the aromatics (cilantro, ginger, scallion, Serrano peppers), and the sauce (yogurt, tomato paste, mango chutney, garlic, kashmiri garam masala, cari, cayenne, salt), then got to work.

Like many good curry dishes, this one started with a shitpile of onions simmering in oil and ghee.

Less than an hour later, just after the aromatics went in, and immediately before I shoveled a bowl into my facehole.

Venison Keema - sorta like sloppy joe mix, only with basmati rice, and faaar superior (IMO).
Venison, caramelized onions, tomatoes, hot peppers, garlic, ginger, garam masala...let it do its thing for an hour or so, and this is the result. Slap it on a bit of rice, open a pilsner, and Bob's yer uncle.
