What Are You Eating?

Looks delicious, a good duck confit is hard to beat. On the way back to Paris from LeMans last summer we stopped in the city of Chartres and had dinner at a French restaurant recommended by locals. Right across the street from the historic gothic cathedral, the duck confit was amazing.
The year I retired my wife and I flew to France to visit our daughter. We decided to tour Père Lachaise; afterwards we dined in a very nice restaurant. Duck confit for me, it was delicious. I really enjoy seeing the pictures @Brute posts of the foods he prepares. My culinary skills are damned limited. Seeing what he prepares often makes me want to knock on his door.

I was going to make something that required 2 1/2 hours to prepare but I started getting hungry so I went with a choice that was completed in 20 minutes. Velveted chicken breast with shiitakes in a coconut milk braise with kaffir lime, sambal olek, fish sauce and chicken stock served over chow mein rice noodles with olive oil and Colatura braised baby spinach. Picture taken before a sprinkling of cilantro, fresh mint and Thai basil.

20 minutes?! Looks good, and at that speed you must either work commercial kitchen illicit substance driven fast, have a third hand, or a solid sous chef.

A Dub-C with Boss Sauce.

Hey you’re in town. We might’ve crossed paths in transit as I took the kids for burgers yesterday. Dub-C is a solid burger but the Boss fries are nothing special, and I had a taste for a fried chicken sando (and Boss’s is not good) so that means I took the kids to Coastline, which, if you haven’t tried it, deserves a go. Coastline makes their own near perfect buns and their fries are legit.

Agreed on the Boss fries - reminiscent of Ore-Ida crinkles. Burger was pretty good, tho.

Coastline is pretty good, the WS shop is about 3 blocks from where I used to live with a nice older couple 😅

I went to Boss because Farmboy was closed when my plane got in. It's still on the list, as is Familyfriend.
Did you get the deep fried Oreos ?
😁
After several Texas county fairs, fried oreos are rather pedestrian. Deep-fried ice cream is where it's at.

Sometimes a fella just wants somethin' remotely resembling a pizza.

We had a few Naan that were approaching "less than fresh" status, so we oiled em up and toasted em for a sec, then dressed em with a sauce of roasted tomatoes, peppers, garlic, and some of them penzeys I-talian herbs. Put some fresh Montana Zemo garlic slabs on em, a few oz of hot sopressata slices, some sliced roasted peppers, then topped it with mozz and pecorino. Enjoyed with about half a bottle of bitchin' super Tuscan.
