The year I retired my wife and I flew to France to visit our daughter. We decided to tour Père Lachaise; afterwards we dined in a very nice restaurant. Duck confit for me, it was delicious. I really enjoy seeing the pictures @Brute posts of the foods he prepares. My culinary skills are damned limited. Seeing what he prepares often makes me want to knock on his door.Looks delicious, a good duck confit is hard to beat. On the way back to Paris from LeMans last summer we stopped in the city of Chartres and had dinner at a French restaurant recommended by locals. Right across the street from the historic gothic cathedral, the duck confit was amazing.
Fork in hand…!!!Seeing what he prepares often makes me want to knock on his door.

20 minutes?! Looks good, and at that speed you must either work commercial kitchen illicit substance driven fast, have a third hand, or a solid sous chef.I was going to make something that required 2 1/2 hours to prepare but I started getting hungry so I went with a choice that was completed in 20 minutes. Velveted chicken breast with shiitakes in a coconut milk braise with kaffir lime, sambal olek, fish sauce and chicken stock served over chow mein rice noodles with olive oil and Colatura braised baby spinach. Picture taken before a sprinkling of cilantro, fresh mint and Thai basil.

Hey you’re in town. We might’ve crossed paths in transit as I took the kids for burgers yesterday. Dub-C is a solid burger but the Boss fries are nothing special, and I had a taste for a fried chicken sando (and Boss’s is not good) so that means I took the kids to Coastline, which, if you haven’t tried it, deserves a go. Coastline makes their own near perfect buns and their fries are legit.A Dub-C with Boss Sauce.

Agreed on the Boss fries - reminiscent of Ore-Ida crinkles. Burger was pretty good, tho.Hey you’re in town. We might’ve crossed paths in transit as I took the kids for burgers yesterday. After several Texas county fairs, fried oreos are rather pedestrian. Deep-fried ice cream is where it's at.Did you get the deep fried Oreos ?
