Omakase...four large each...2.5 hours...there were at least 3, maybe 4 courses I forgot to take pics of. It was a marathon...Was that an omakase meal or did you choose what you wanted? If omakase what is the per person cover for that awesome selection?
Very fresh, good uni is delicious...old, poorly kept uni is not...I've eaten it right out of the body sitting on the beach after harvesting them...mmmm, Uni. Anthony Bourdain called them little buttery tongues which always struck me as a pretty apt description. Looks delicious.
Generally speaking, bluefin is fattier...Is there any comparison to bluefin, and yellowtail ?
