Never had pork stomach, no lie not the most appealing looking thing pre-cooked but wow, plated that looks very good! I bet it has a lot of great flavor.Found myself boat shopping this week and traveling through a town with an actual carniceria. Wish it wasn't 2 hours away. Was thrilled to score some makings and tonight assembled my favorite tacos with a batch of home made salsa and home made refritos. Yum it's been too long. Tacos de bouche are hard to beat. Once you get past the thought and association you won't be sorry. Of course I like tripas also but not as mild and tasty as bouche. Have a lady friend who always asks when we go out to dinner if I plan to order "beaks and feet." Looks really good. And Nate P uses that same trick for the stock for this paella (paired with some fly fishing).made half my stock was from the shrimp head/shells.
