The classic pairing would be a wine from the Languedoc region, but Iโ€™ve got a couple nice red Burgundyโ€™s to have with it
 
Last time we had an Oregon Pinot with our Cassoulet.
I like that it lasts for many days...the Cassoulet that is.

Now I need to find an occasion worthy of the effort and make some here.

I haven't made it in two years...and we have four to eat it, so it won't last as long as I would like it to...

Boiled up some eggs I needed to use this morning.
Warm egg salad with guacamole, bacon, sweet onion, tomato, green pepper and cheddar and feta cheese. Good way to start a football watching Saturday.
