What Are You Eating?

Tuna with an amazing sauce! Brussel sprouts with basalmic vinegar! A little salt and pepper on both and some lemon on the fish! A little overcooked for me, but perfect for mom!

Soy-brown sugar-fresh garlic-fresh ginger brine. Brined overnight similar to salmon (a bit less sugar in the ratio), the smaller pieces are a bit salty. The large piece I sampled was great. I’d still go more like 8 hours in this brine as opposed to 12 if there’s ever a next time. I might also try a simpler brine of salt and brown sugar and maybe a bit of garlic powder and paprika.
 
Used to be able to buy sturgeon from local grocery fish counter, they sourced it from two commercial fish farms in Calif, one in the Delta and other near Susanville. Haven’t seen it for years. Delicious.

Having a simple grilled dry aged strip tonight…

After leaving Mercer Island in 27 degrees on Friday, then leaving Twin Falls Sat morning 16 degrees, and getting gas in Jackpot NV 9 degrees…im liking the 56 degree weather in Henderson…and dry…and grilling…
