Daikon = asian turnip
Dashi = broth usually made from konbu & katsuobushi, used in many japanese soups
Wakane = type of seaweed

Kenji Lopez-Alt, it's nominally a cookbook with LOTS of great recipes, but it's actually a textbook on the subject of cooking in a wok. It covers everything from heat, to ingredient prep, to experiments on the best way to do things, to recipes from across Asia. I've cooked a couple dozen things out of the book and they've all been great.

Well my first experience went well last night. Mongolian Beef and rice. I would rate it a 6.5 but my wife ate it up and gave it a 8.5. As always following the recipe is great to get started but until you experience the cooking and taste you will improve it with adds and subtractions as you get more experienced. At least that is what I hope forThanks for sharing! I will look it up.
