Bottom to top - basmati rice toasted in a turmeric and cumin-infused butter/oil mix then cooked in chicken stock; chicken thighs marinated in olive oil, red wine vinegar, salt, cumin, and black pepper; cut and salted tomatoes; shaved romaine; a yogurt sauce with sour cream, water, preserved lemon, garlic, parsley, olive oil, red wine vinegar, and black pepper; a small handful of parsley and more black pepper.
How's the Kewpie Mayo ?
I've seen it before and wondered...you find it more 'eggy' with it being all yolks instead of whole eggs ?
I'll probably get some next trip, worth trying at least.
I like the consistency of the kewpie too, thicker than Best Foods. Kewpie makes a US version and an original Japanese version, which is even thicker.Definitely has a different flavor and color from regular mayo. At least to me, I can also taste the vinegar which I canβt in regular mayo, which I like.

I use the same oneβ¦I broil until I begin to get the char, then switch to bake until internal temp of 120β¦Better half loves miso black cod!

Best Foods homestyle kind of splits the difference between regular Best Foods (aka Hellmans) and Kewpie. They used to carry it at Safeway but I donβt see it anymore. But then they started stocking Dukes at QFC so thatβs what I usually get now.I like the consistency of the kewpie too, thicker than Best Foods. Kewpie makes a US version and an original Japanese version, which is even thicker.
If you like the vinegar Duke's is the tartest and they use apple cider vinegar, I really like it.
I love that dish. Do you do the super long marinade?I use the same oneβ¦I broil until I begin to get the char, then switch to bake until internal temp of 120β¦
