What Are You Eating?

Hey there!

That's a great question. I eat too much meat and not enough veggies so I forced myself to make it meatless this time. I must say that although it was good, it and everything else is always better with meat. 😁
Just ribbing ya'. I'm also a meat eater who wishes he had the self discipline to increase the percentage of vegetables in my diet.
 
It's easier said than done. At least for me anyway.
I like to take the strategy of meat at flavor instead of for the bulk volume of a meat. Flavor your veggies and alternative protein sources with meat and consume WAY less while still not missing the meat. Braises, stews, stir fries, etc. helped cut about 1/3 of our meat consumption to replace with whole grains and veg.
 
CSA is probably the best bet for most folks.
Getting them weekly is great for those I know who subscribe to a CSA.
Our lettuce just got planted last week, so 4-5 weeks before the salad season begins.
Mixed blessing, as 5 days a week of salad, while healthy and all that stuff, gets old after a few months. But it is cheap, so it has that going for it, which is nice.
