What Are You Eating?

The world's smallest Costco now sells poke. Hamachi poke, even.
Not much a pound of good poke can't fix.

I’ll never forget my mom telling me the story of the first time she had hamachi in Japan back in the early 70’s…after eating some hamachi sashimi, she loved it and asked her server, who did not speak much English, what the name of the fish was…to which she replied “hamachi”…my mom then said “I don’t want to know how much it costs, just the name”…this went on for a few rounds until she realized what the name of the fish was…
 
It's the fish I judge all sushi restaurants by. If I've not eaten there previously, I'll order a beer and a negi-hama roll...the first bite is usually a pretty good indicator of how the rest of the meal will go. I've only had to leave after the "first-roll test" a handful of times, and most of those were because the house was trying to pass off Escolar as Hamachi.

Hamachi kama, Hamachi toro, negihama, poke, aguachile...so many different and tasty ways to prep my favorite fish to eat
