@Zak that is a good deal on prime rib roast. I know you cut yours up into steaks but the rib bone question reminded me of this. I appreciated Alton’s grumpy old man, this is the way I like to do this vibe in the video/recipe/method.
I decided to eschew the rib roast this year and will be making porchetta on 12/25.
I guess technically I’m making “porchetta.” I’m not roasting a whole pig, etc. I wish. But I do have a good sized skin-on pork shoulder.I love that stuff, lots of herbs, garlic, pork fat...
What's not to like ?

coarse salt, coarse ground black pepper, hot grill...and beer.I did a shop at Fred Meyers for Christmas dinner. They have rib roasts on sale at 7.99 a pound. They are usually 20 per pound.
I got a $190 rib roast for $90. Then I brought it home, removed the rib bones for BBQ beef ribs, and cut the roast into seven fat rib steaks that went into the chest freezer. Rib steaks at 8 bucks a pound is an insanely good deal! I'm feeling good about my knife skills, too.
I've never cooked beef ribs before and don't have a smoker. I'd welcome any suggestions on how to cook 4 connected beef ribs. I did not leave a ton of meat on them. Can my dog get a cooked beef rib bone? Or is raw one better?

Yes, I have a gas grill (Weber Genesis circa 2015) and I have been looking at a perforated metal tube that can be filled with hardwood pellets. I can't get a lower temperature than 325-350F in that grill, so no real low and slow for me.Ok, let's let that go. I'm not sure 4 connected portions would normally fit in a standard air fryer.
You have a grill of any type? For not much money, you could add a smoker box below the grates and go from there.
