The pork tenderloin tips will come in handy. Think I'll pair it with .. well, not sure yet.
I just ate the last remaining pork tenderloin from my Costco trip and it was the best yet. Cut medallions about an inch thick. Brined in 7Up and soy sauce for an hour, then marinated in soy sauce, oyster sauce, sesame oil, sweet rice vinegar, sugar, and chili crisp for half an hour. Then grilled on a ripping hot grill for about 1.5 minutes on each side. They were good finger food right of the skewer but I made most of them into a ramen bowl.

One of my cheap comfort foods is ramen with an egg drizzled into the hot broth, like egg drop soup. I made that and added the sliced pork medallions.

I'll make this again and maybe remember to take a picture next time.
