What Are You Eating?

A absolute favorite when I can find the star of the show. Brown butter and lemon/caper skate wings. Perhaps the best fish I have ever enjoyed. Besides being hard to find these skate wings took almost 6 minutes to cook.

I remember a time when some Chinese restaurants would use a round cookie cutter to cut out rounds from a skate wing and sell them as scallops…that’s how good they taste.
 
New York Medium rare
Risotto
Scampi style shrimp
Asparagus, and semolina cheese bread
Wash it all down with an Oregon Mencia

It is a fine combo, one I probably won't finish, but not for lack of effort I assure you.

@Brute - I have Polish and andoullie kielbasa going into a pot with beans n peppers n celery n other stuff. Should be good.
Although I've established myself as a bit of a lowbrow wine drinker, just so ya' know, a few years back when we were visting Napa and Sonoma, Mrs. Salmo bought me a membership to Benziger Winery. We get a shipment every month or so, and the bottles average $35 each, or better, with the Tribute going for around $75. Which is why I only get that out when I'm fixing prime rib. But since I drink like a fish, it's usually one of the box wines for every day, like tonight when I'm BBQing hamburgers. Not gonna' defile a couple bottles of the good stuff for those. And besides, I gotta' make that sociable security check last all month.
