I remember my mom telling me many years ago on a trip to Japan she tried hamachi sashimi for the first time...she asked the server "this fish is delicious...what kind of fish is it?"...to which the server replied "hamachi"...my mom said "I don't want to know how much it costs"...Hamachi for that ass?

I love onions…in every way imaginable. But my wife hates them, which presents a conundrum for the cook…In something like a stew or braise, I’ll quarter them and run a wooden skewer through them…or they get blended into a paste (she actually likes the flavor of onions, just not their texture)…or chop/slice them raw and add to my dish only…
We just harvested our Walla Wallas...and will using them every way we can, then carmelizing and freezing after that because they won't store a long time.
The storage onions are not quite ready, but they will hang in the barn and be good till March after harvest in the next 2 weeks.
Onions are a staple here...grew 100+ of both types.
