What Are You Eating?

Roasted corn, roasted jalapenos, garlic, scallions sour cream, mayo, fresh cheese salt and pepper.
Looks good, needs chorizo...

I used to be moderately fluent, and can still get myself stabbed in any Latin American country...

Spot prawns on the cast iron, seared albacore (post-marinating with soy, seame oil, mirin, ginger, garlic, etc), smashed potatoes and sauteed broccolini. Top right is my kid's fingers about to steal some prawns from my plate while I take a quick picture...

Tonight we had grilled sockeye salmon with fresh local corn and zucchini, Walla Walla sweet onion, and fresh garden tomato stir fry. No photos of the meal but our 9 month old granddaughter enjoyed it. She’s tired after a day of playing and time in the swimming pool. She has been with us for two weeks with her big sister (3 years old) and mom. Tomorrow we head to Whidbey Island to stay at a rental house on the beach. Bringing my fly rod but that’s probably wishful thinking….

still working out the kinks with the blackstone - breakfast for dinner!
Breakfast for dinner is a staple in our household!

First attempt at blackened salmon. I’ll be doing that again.
Four minutes per side seemed perfect for the size of fillets I had. I read a few recipes before trying it. Some folks use butter while others use olive oil.
I used butter but will try olive oil next time. Also had a broccoli slaw salad with ginger sesame dressing and topped it with some wasabi sesame seeds. I even broke out my non paper plates. 😂

My favorite is a bit of both. Get your oil hot and then brown your butter before placing your salmon in. Flip and add another pat of butter.

The PNW bear diet! Catch of the day coho and dungeness crabs, garden pick of the day sauted zucchinis and pick of the day blueberries for dessert. Ocean coho provided delicious butter sauteed salmon eggs, so good!
