What Are You Eating?

It is
Guanciale (or pancetta), hot italian sausage, onion and egg yolks with pecorino romano cheese, tomato passata...really easy to make.
Very good we thought, change up from a typical red sauce meal here.
Will make again
Good excuse for a nice Chianti too.

Chard from my friend's garden. My favorite leafy vegetable. Sauteed the stems with a garlic scape, ginger, olive and sesame oils and salt.

Added the leaves when the stems were soft, plus some Ume plum vinegar.

Served with Costco meatloaf and mashed potatoes, and lemonade on ice.

Neighbor brought me some smoked Kamloops rainbow from his trip.
Put it on some rice and seaweed crackers with cream cheese and red onion.
