Smoked cheese anyone?

My favorite hobby in the fall and winter... I usually smoke up about 20 blocks of cheese in the fall and give them away during the holidays.. I use a smoke tube and 5 hours later magic happens. I vacuum seal for 60 days min before opening them. I went into grocery outlet and found these 8oz blocks for 1.99 a piece and couldn't resist.

Never really thought about trying it but I like the idea. Do you use a certain type of pellet in the smoke tube? Where do you place the tube in relation to the blocks? Any other tips?
 
Matt I use the Amazing smoke tube pictured below i believe they are made in Longview Wa not that it matters there are a bunch of variety's out there, i use the "Blend" pellets its a mixture of a bunch of pellets, If i can do it anyone can smoke cheese, I use a bbq, take off the grates and place loaded tube of pellets on the bottom of the bbq, light the pellets in the tube and replace grate on bbq and put cheese on opposite side of the bbq that the smoke tube is on. Close lid and wait till its no longer smoking... Generally takes 5 hours. I also in some occasions i do a 2nd run of pellets in the tube for an additional 4-5 hours for heavy smoke flavor. It don't get hot enough to melt in the fall or winter, in fact yo would be hard pressed even in the summer time to get hot enough. let me know if you have any other questions.
