NFR Quesadillas

Non-fishing related
Chorizo, manchego and cilantro, with carmelized onions, black beans and avacado.

Try making some tlayuda sometimes, sort of a oaxacan pizza type thing, but folded in half it is sort of like a quesadilla...or tostada, depending what you put on it.
Same flavors, so should be good for kids if they like quesadillas.
Are you making tlayudas with the real tlayuda tortillas from Oaxaca or substituting with a standard flour tortillas?

I miss living 5 blocks from Loxicha in North Seattle. A GREAT little Oaxacan taco trailer that sold the real deal al pastor tlayudas. From time to time I drive up there just for it.
 
I prefer the mulita, but either way I'm going queso Oaxaca, leftover meat, onion cilantro inside with crema and salsa on the side. Bonus points if you have jalapeno and carrot escabeche.
 
Making the tortillas at home.
Not as big as Oaxacan tortillas, but corn torts nonetheless. Hard for me to make them 10-12" around.
I have seen Oaxacan tlayuda torts for sale on amazon and other places, but too spendy for me.
Making torts is easy and cheap...after all it is peasant food.
 
Fried spam drizzle a little shoyu over the spam. Put the patty on some rice wrap it in nori then you have a musubi. A little furukaki sprinkled on top then wrap it in a sinaloa tortilla and some mango salsa and you are good to go
 
I don't take to spices and things that are hot and spicy. So I only eat Mexican if my hands are tied behind my back and I'm dragged into a place like that. I some times even have trouble with Tomato sauce. To much red sauce is a no no.
