Another crappie score!

Nice cooler day today, we went bobber fishing for trout and I devirginized a “new” real raw cane rod. 23 trout…but that’s not the real score…..brought home seven nice crappies casting to sipping fish with a new color damsel nymph on a dry line. LDR’d quite a few….fun and yummy!! (y) Only an after shot….

IMHO the best eating fresh water fish. Many years ago I was told a secret way to "bread" panfish. Take a bag of "Cheetos" and crush them up into a fine powder and use this as a substitute for bread crumbs. Whatever chemicals and flavorings they use to make "Cheetos" so crunchy and tasty...actually make for a very good "breaded filet". The orange color turns a golden brown color and no one would ever guess that you used "Cheetos". Dip them in scrambled eggs, cover them in Cheetos, fry or bake...Trust me..this works really well..just never tell your quests the secret.
 
I know it sounds kind of weird...but many galley "chefs" in Southern California use this sneaky trick. The passengers thought it to be some kind of culinary genius. And the "chefs" would never tell the secret.

I have only used the classic Cheetos. Often times I have bought a small bag from the liquor store, smashed it up with a mallet while still inside the bag. Perfect amount...no mess. But I have never veered from the "original" flavor.

I'd never caught a crappie until one spring day over at Munn when I couldn't keep them off my line. (They were fairly small.) Of course I've never targeted crappie either, but I heard long ago that they are excellent table fare. How large do crappie need to be in order to get a decent fillet off them? Which leads to the question of how do you fillet crappie? Guess I could find that on You Tube if I ever find myself in this situation.

I’ve C&R’d some huge crappie from Munn….they’re just lucky I had to release them! Catch fillet and release? I’d say a keeper/eater starts around 9” to get a decent fish stick…..warm water or cold water they taste great! A sharp fillet knife is a must…..
 
Back in the day, in Southern California, kelp bass had a size limit of 12 inches. Most fisherman would not bother with keeping them. Then came the "fish taco" craze, where fisherman realized that a 12 inch bass could make two very nice "fish tacos". That was a bad thing for the kelp bass. That being said, IMHO a very small amount of quality fish can be used to produce a very robust and tasty meal. Corn tortillas, cabbage, white sauce ,,,, and just four Crappie filets will feed two happy people with delicious tacos.

The spicy Japanese rice crackers (“Kaki no Tani”) can take this same concept and take it next level or two higher. Replace the Cheetos with this.
