What is the best Mexican food in Spokane or is it just hopeless?

What is your definition of good Mexican food?

Chicken enchiladas with mole’ sauce.

i have to say i'm curious to hear ive's reply on this. anyone who's lived in the PNW for a while has had tons of americanized mexian food and probably some of the more authentic stuff too. it is generally predictable but good. the biggest liability, as ive alluded to, is that chicken is often boiled and can be chewy and unlucious. amidst all of that, i've had a handful that i thought were superb - a recent meal at rancho chico in omak among them, and another place in marysville i can't recall the name of. but, i've enjoyed ive's posts about food over the years and his evident passion for it - so i'm curious to hear his definition of good mexican food. now i'm hungry....

I am too curious. I don't enjoy Americanized Mexican food. Giant plates with soupy beans doused in cheese, and some other meat filled tortilla doused in canned sauce and again covered in cheese are not my thing. I don't order rice, or beans, at the restaurants I frequent. Wasted space for what could be an extra asada, adovada, or barbacoa Taco.

I'm not a huge chicken fan at Mexican restaurants in general, as I agree, it's often boiled/crockpotted and super dry. But hey, in my experience that's how it is in Mexico too. Arroz con Pollo with chunked chicken can be better, but not always. So I really don't order chicken unless it's tacos, and you know they are frying boneless skinless thigh meat up on a flat top. This is why I asked the question though, if Ive is looking for chicken enchiladas, you could travel all the way to Mexico and be disappointed at most restaurants. Boneless, skinless breast meat shredded up and sitting in a crockpot all day, no matter how much fat is added, is going to be dry.
 
Re. Chicken in Mexico: Long ago I visited a friend in San Diego. We took a day to drive down Baja a ways. We were lookin for a place to eat lunch and came upon a roadside stand with a big grill out front. They were grilling spatchcocked chickensβ€”pollo asado. We stopped and ate. Thick tortilla chips, bowls of condiments, salsa, abuelita slapping out tortillas out front. We ordered beers. They went across the street and came back with plastic cups of draft beer. That was a great meal.
 
I think DeLeon's is great, family owned, and several locations. Cochinito (downtown) is also great.

For Chinese, I highly recommend Gordy's Sichuan. It is on the South Hill, but worth the extra drive.
