Everyone I know who has had carp has said it's excellent. I haven't had it because the majority I've caught are from the lower Columbia where it is advised to not eat them. If I got one from a place without high amounts of PCBs I'd definitely try it.

I actually watched those videos. The first one looked...not great. Big ol’ skin-on carp chunks in a weird marinade and cooked in lukewarm oil. No thanks. The second method looked much better—remove the skin, and score before a proper fry to supposedly “cook the Y bones out.”

Legend has it that carp was originally brought to America as a food fish and was literally considered the top tier. It wasn't until they exploded in population everywhere that the bad rap for them came out. It was supposedly a propaganda campaign by commercial fishing to turn people on to something more profitable.

I believe carp remains the most popular food fish world wide.
