My GF got me a blowtorch for Christmas.

Seared albacore belly sashimi and blanched freshly dug razor clam.

With a squeeze of lemon and a dab of wasabi and soy…. Holy shit, so fucking good. Not bad for hotel kitchenette cooking.

It's a great way to deal with leftovers. Slice a days worth of ham, beef, or turkey. Vacuum seal in in a bag and plop it in the freezer. Sous vide to thaw.
