I'm mostly on the same page, but I get better results by searing a whole slab of chuck, and then cubing it. If I had a super badass commercial-industrial power range with a huge cast iron Dutch oven, I could maybe get a good sear on cubes, but with my relatively wimpy home gear it seems like I get more of a limp browning/ pre-cooking of the beef that way. So I look for chuck that's about 2.5" thick and sear that thing on all sides, slice it lengthwise and then cube it up, and then all the pieces have some hard sear on them.Drying the beef cubes completely before browning, tossing the cubes in flour, salt and pepper, then searing the beef in bacon fat.
This is the way...other ways are inferior.
My beef stews probably have more in common with a Beef Burgandy that other recipes...but still is quite good IMHO, and certainly worth the extra effort.

I would like a sample of each version.......View attachment 195141View attachment 195142
Funny you should mention beef stew…just now made two separate batches of Galbi Jjim…Korean short rib stew…one very spicy with gochujang & Korean red chilies, one without. This type of stew, unlike how I make other stews, does not involve searing the beef first…you soak the short ribs in cold water for an hour, then rinse…then par boil for 5 minutes, which is then rinsed to remove blood and bone debris from being band sawed…the sauce it is first braised in is soy sauce based, with grated asian pear, minced garlic & ginger, mirin, brown sugar, black pepper and water…after an hour, cut up korean radish similar to daikon and carrot is added, 30 minutes later shiitake mushrooms, 20 minutes later yukon gold potatoes, followed 30 minutes later with sliced green onions…served with hot rice…and banchanView attachment 195141View attachment 195142View attachment 195142
If you don't toast the bread first I don't want to be friends....I can't wait until we open up a pb&j thread.
