What Are You Eating?

Huh, good to know, I guess. I grew up on my mother's style of English over-cook everything, so I'm leery of over-cooked food. I think we steam broccoli for 7 minutes, maybe only 4; I'd have to check with Mrs. Salmo to be sure. I see that people often put asparagus on a grill, and I'm paranoid that it will end up as blackened mush.
Yeah grilled asparagus frequently does come off overdone, I agree. I used to grill asparagus, but not really anymore. Steamed or sauteed are my go-to methods for asparagus these days.
 
On a more serious not, I grill and roast veggies most of the time, a veggie basket for the grill is handy.
Tossed in oil, simply seasoned, and some parm most of the time.
Grill in summer, sheet pan in oven in winter.

Asparagus doesn't take long...this has been known for a while.

When Gaius Octavius (first Roman emperor) wanted something done fast, he used to say to his subjects: “Velocius Quam asparagi conquantur!”. It means quicker than boiling asparagus.

What is Kofta?
It is a name for Middle Eastern (Egyptian/Turkish, etc.) spiced ground meat skewers. They are usually ground lamb and beef, but these were just burger meat. There are many versions of recipes. This one had 85% ground beef mixed with a paste of wet everything bagel chips, shallot, garlic, nutmeg, sumac powder, cumin, fresh chopped parsley, Aleppo pepper, black pepper, and salt.

Tzatziki sauce= plain yogurt, cucumber shredded with the large holes on a box grater, fresh chopped mint, minced garlic. It could have used salt, which I added at the table.

It’s that wonderful time of year where the garden readies lots of salad ingredients. The kales, chard and dill all came from the garden. All the other stuff came from the store.

It all tastes better in the bowl my daughter gave me for Father’s Day. There are fish designs on the bottom, but just like real life fishing with me, you won’t see them.

I’m looking forward to the tomatoes, sweet peas, beans and cukes, but they’ll need lots more time.
