Do you freeze the sable fish before using it for sashimi? Wondering about parasites. In doing some research some say it is not safe even after freezing and yet it is a sushi staple in Japan. I've never had it raw but I imagine it would have the same smooth texture as hamachi.Perfectly "not cooked" is my preference

I'm one for trying just about anything, but I've yet to have pickled fish that I've enjoyed even a little bit. Strange too because I love pickled and/or fermented vegetables. Can't get into it with fish for some weird reason.Try pickling black cod.
