Also, if you’re in the Spokane area, they raise some of the best lamb to cook/eat. It’s my favorite meat to work with.
 
in the 70's an older Hawaiian friend who had moved into Half Moon Bay used to do an annual pig party...he'd burn a fire in a pit the day before until it was all coals, wrap the pig in wet burlap and then bury it on top of the coals..the next day we'd stand around with beers in hand for the dig it up reveal...melt in your mouth tenderness.
