At most, it could be a sea run trout. Definitely found in rivers and streams. Given that Japan’s geology is very similar to ours, like our steelhead rainbows and SRCs, I wouldn’t be surprised if Japan does have a sea run population of trout.
I should ask the chef the next time I visit San Kai.
