What Are You Eating?

I call this Haram Shepherds Pie...a tasty bastardization of multiple food cultures.

A month ago I bought a pork shoulder for cheap, seasoned it with salt, MSG, and Lebanese 7 spice and roasted it for ~8 hours in a 275 degree oven before shredding it. I vacuum sealed and froze most of it in 1 lb increments. This is the haram part, as pork is against Islamic food law.

I came up with the idea based on whatever we had on hand: pork from the freezer, some carrots, cauliflower, celery, frozen peas, garlic, Aleppo pepper, hyssop thyme, tomato paste, Pinot grigio, chicken stock, and some Yukon gold potatoes. Because I'm kinda lazy, I used Wondra to make the gravy and sliced the potatoes so I didn't have to make the mash.

Best part of it all is that this is "diet food". 600 calories per serving (1/5 of the pan).
 
I was watching Beat Bobby Flay last night. He made osso buco in a pressure cooker. I was deeply offended.
Pressure cookers have their time and place (I use my Instant Pot all the time). But braised meats are so much better cooked low and slow. I’ve done it both ways plenty of times and I’ll never go back to the “quick” braise method of a pressure cooker.
