Asking those who know, is kimchi invariably spicy hot?

My BIL eats kimchi over some kind of noodles for breakfast every morning. Every morning. I ask him how he can eat that stuff. His preferred brand smells to high heaven. He always responds with, "How many dead Koreans do you know?"

How hot or spicy is up to the maker…I’ve had some that was quite bland, but I have a high tolerance for spicy food.

My dad got a fridge for the garage just to keep the kimchi out of the main fridge…

We buy Lucky Foods "Seoul Kimchi"; it's not hot but has some heat and we love the flavor. ("not hot but has some heat" - I'm guessing that you break out in a sweat when you eat ketchup.) ;-)

Not ketchup Buzzy. I've posted before that I like Thai food at one star *, but at two stars **, yeah after a few bites I'm sweating. At *** I last about two bites, and anything **** and my day is over.

There's a "new" Thai place in Ephrata, usually "**" is easy for me, not so at the new joint as **'s is hot a heck. And don't get me started on a sliced jalapeno pizza I ate one time. It wasn't "one" day and it was over.

Cabbage Kimchi is basically sauerkraut made with Napa cabbage, and can range from "white" - salt only, no gochugaru (pepper) - to ridiculously hot, made with the bhut jolokia pepper. There's a wide range of expression.
And your BIL has good taste in breakfast choices. Noodles with egg, hot kimchi, and herbs are a breakfast staple for me as well. My wife thinks it smells like the north end of a southbound skunk.
 
That makes two women. Anything over very mild heat aggravates my digestive system, hot going in, hot going out. 😥

That duck leg looks pretty good.
 
Love lentils, and duck confit is a winner always.

I didn't like that one, I thought it was overly acetic and not enough lactic and lacked any kind of seafood umami. When I don't make my own, I prefer to get it at H Mart or Paldo.
