I use to work in a smal town in Arkansas on the way from the airport in Little Rock there was s guy that took a whole smoked ham and smoked it for another 24 hours. He made sandwiches out of it and sold the ham bones for $2.00. that made the very best ham and black eyes peas I have had. That sounds fantastic ive never had it.

The braised lamb has me drooling, it looks delicious. Curious about nettle in mashed potatoes.....A somewhat Polish ish inspired Easter/Passover dinner. Braised lamb shank, fried beets (buraczki zazmazani), nettle and leek mashed potatoes, buttered cabbage and some haroset. I added a few dried prunes in the braising liquid which added a nice sweetness to the sauce.

Hey Buzzy, we pick nettles every spring. Usually just enough for a dish or two. I was going to make nettle and cheese Pierogi but wanted something easier so mashed potatoes it was. I wilt them in in a pot with just a little water for a few minutes which deactivates the stinging properties, then chop fine and add to whatever you are making. The potatoes were inspired by your basic kale mashed potatoes or colcannon potatoes. They were good! The braised lamb has me drooling, it looks delicious. Curious about nettle in mashed potatoes.....

I grew up on a small farm between Sequim and Port Angeles; we had creek bottom that was loaded with nettles. Growing up there more than once I got into stinging nettles. I remember reading about nettles as a food source but just never braved it. Thanks!Hey Buzzy, we pick nettles every spring. Usually just enough for a dish or two.
