So, i’m somewhat intrigued by the concept of turning my gas grill into a smoker. There’s not a lot of information on the website for the smoker and how to use it. I also think it would be a lot of fun to build a wooden smoker. So my question to you all is have any of you purchased and used one of these. If so, how are you using it? Are you only using it as a cold smoker? I have lots of questions, got any answers.
 
What are your intended products to smoke?
I have used a smoke box on my BBQ that was fine for some added flavor to a steak. But I wouldn't even try to do a 16hr brisket!

I have 2 smokers, 1 is only for smoked Salmon and only with Alder, the other is for everything else.
 
It looks like that Smokai would work for smoking salmon in your existing BBQ if you wanted, but you would be limited with space if you want to smoke a lot of fish.
 
I smoked fish in the gas grill with a smoke tube full of chips. Glad I won a new grill the next year, as everything seemed to have a hint of fish after the long smoke. My little chief smoker is better, and good enough for the wife.
 
So here’s the funny part of the equation. I have been buying Costco salmon fillets and sharing them with my neighbor. He has a smoker. He gets to keep one, I get to keep the other one. So far, it’s a pretty good deal… but I’m thinking of doing some on my own.
 
I did some Costco sockeye fillets on my Traeger grill last week. More of a hot smoke but they turned out pretty good. Normally I use my Big Chief smoker and Traeger pellets. Used to smoke with alder but they aren’t available so use apple. Photo added.

I use a Charbroil Big Easy for about half my smoking (not a vendor endorsement , didnt buy mine from there)


Works pretty good, but definitely need to have remote monitor temp probes to keep it right.

Charbroil also makes an electric only version in roughly the same format

Before that, I used a smoker box in my Weber Basic grill. Tricks being to use only 1 burner on low and strategic placement of tinfoil. I followed the Alton Brown episode on doing it this way, and it worked fairly well. Also, it was my first foray into using the Weber as more than just a grill for burgers and dogs.

Otherwise I've been using my original series Ninja Woodfire multi function electric, which works great for small families like ours. They make a newer XL version which handles larger portions, btw. This device, plus a few internet searches on smoke times and rubs makes it really easy to smoke things.
