My wife agreed to such a trip. It can't be a fishing trip disguised as a beach vacation. Quiet beach fun is more important. But, one guided day for me plus some DIY effort... that can happen. A single bonefish on a fly is the bar I will set, everything else is gravy. Any ideas would be appreciated.

Cape Santa Maria on Long Island could be a good option for what you are looking for. Or Chez Pierre, also on Long Island, if you don't mind more spartan accommodations.

I did a guide day with Garth Thompson on Exuma. He got us into a lot of bones.
He was super laid back and didn’t talk much other then to continually pointing out bonefish.

Eleuthera has everything you mentioned.
DIY or guided, lots of secluded beaches and flats, quaint villages.
