Years ago my family and friends used to rent the Green Ridge Lookout above the Metolius River, in Oregon. They used to have an ancient wooden outhouse where you could sit on the throne with incredible views of Mt. Jefferson, Sisters, and even St. Helens and Adams. I'd always leave the door open for the view. Then the USFS rebuilt the outhouse to wheelchair friendly with a concrete floor, modern walls, etc. It was a good move, but they turned the access point away from the stunning view and now it's nothing like the old days.

I have one location in the West, and two others on other continents. Hope you get a chance to visit each one, sit a spell and take in the view.
Grand Canyon: To keep the river clean while you're rafting and camping in the Grand Canyon, all the poo is collected. The Guides set up a station, shielded by location and plants to do your business. The views can be spectacular. Urine is collected in a 5 ga. bucket and disposed in the river. To poo, you use the Groover. You sit on a toilet seat attached to a surplus Army ammo can. The ammo can is sealed when the party leaves the campsite and is transported on the rafts. Until someone thought to attach a toilet seat, you sat on the ammo can which left...two grooves in your backside.
Loo with a View, Okovango Delta, Satawani Camp, Botswana: trousers around your knees, you could look out on a watering hole and hope to see giraffes.
Nyhavn, Copenhagen, Denmark: across the canal from the vessels, colorful buildings and tourist attractions is probably the most handsome, cleanest historic public restroom I've ever experienced.
