Playing catch with my youngest last night and he asked me maybe the best question I've ever been asked....
"Dad, if you could make your own fish, what would it be?".
I paused for a long time and just looked at him.
He started to ask the question again, and I cut him off and explained, I understand the question, it's just such a great question I need to think about it.

So, if you got to create your own fish, what would it be?

I'm currently at:
Taiman body
Large mouth head w/ small mouth eyes
Chinook fins
Arctic Char coloring mixed w/ tiger trout pattern
Carp scales
Coho life history, but iteroparous

It'd be pretty cool to have a version of wahoo that's not as toothy (so no need for wire leaders) and occupies the same habitat niche as SRC, so easily available to in the PNW without having to go far or get on a boat. Healthy, not even close to an ESA listed stock so long seasons and the ability to keep them for the table. They don't even need to be tropical wahoo sizes; I'd be happy with an average of 10-20lbs.

Too much to ask?
 
Size and shape of a Tarpon, aggressiveness of a Chum, population density of rat fish in Puget Sound, takes top water flys, color is that of a Dorado, with sailfish fin, and marlin tail.

Yup....that'll do it.
 
It would be a rainbow trout - after all, I'm salmo g., the former Latin name for rainbow trout and steelhead. These would be rainbow trout and or steelhead ranging from 6 to 14 pounds, mint bright, but with Alaskan rainbow leopard spots, and full of piss and vinegar, like Naknek River rainbows in September, Dean River steelhead fresh from the ocean in August, and Thompson River steelhead in October. They would hit wet flies and also dry and skated October caddis and deer hair mouse patterns. They would hit like a ton of bricks, jump, and run well into the backing, jump again and generally make the angler work to land them. And while we're at it, the population abundances would be large in every river so that anglers can spread out and not be concentrated in one space. Yeah, OK, that kinda' fish would work for me.

Bonus points for providing a food source for Orcas
 
Freshwater: Wild, early summer-run Skamania strain steelhead. Only way to improve on that is have more of them (or just have them again).

Why?

> they take dry and wet flies
> sight fishing in fast boulder strewn water
> mint bright, gorgeous fish
> fight with jumps and blistering speed
> closest thing in freshwater to pelagic saltwater speedsters (which of course they are that too) but in beautiful fly water stream environments

Sailwater: I like @adamcu280 idea for a wahoo variant. A species that is probably top 3 on my bucket list. That or a Dorado variant, although not sure what to improve. They come damn close to the perfect saltwater fly rod fish. Aggressive fly eaters, often sight fished. Fight with Jumps and high speed runs. Mind-blowing colors. And factoring in I like to eat fish, tasty and a prolific, sustainable resource.

A steelhead that could handle 80 degree water, escape all predators and return to the rivers April thru October. And hell...why not, only rise to my riffle-hitched, hand tied #6 Steelhead Caddis. 😁

Coldwater bonefish.
I gots a TON of awesome tidal flats around me, and while sightfishing cruisin' humpies and coho in 2' of water is fun, bonefish would be WAY funner.

Second place would be NE Pacific coldwater, anadromous and iteroparous amberjack. I would lose my damn mind filling my freezer.
