Breakfast Burritos

So I don’t hijack Swimmy’s fajita thread even more, I made 4 dozen breakfast burritos this morning. My wife volunteered me to cook for the family camping trip in July and I like having them on hand when I head out on fishing trips. Once the kitchen is dirty, I figured that I might as well make more. Mine are simple. For each dozen, I use half of a sweet onion chopped, one red pepper chopped, bacon bits (from Costco), hash browns (I use four of the frozen patties), and cheese. Two layers of foil with olive oil sprayed on the top, spread out the burritos, fill, and wrap. Double wrap in foil and make sure they are thin. They freeze and keep very well. In camp, pre-heat the grill to medium and heat 6 minutes each side to crisp up the tortilla and warm up the insides. When it is just me and my fishing buddies, I sprinkle Tabasco on top before folding the burritos. When we are steelheading, up before first light, make a quick pot of coffee to help us wake up, and then fish until the sun hits the water. Then we cook the breakfast burritos.

I'm ready to go fishing with you - I'll bring Tapatio for a little added heat! ;-) Those look great.
 
Chicken fried steak grilled onions peppers cheese hash browns all cut up and rolled into a burrito and covered in Sage sausage gravy.

I stole the idea from the Harvester Restaurant in Tacoma
Church Cantina's is pretty damn good.
