Made my first batch of jerkey from the mule deer doe I got late last fall. Half the batch was cajun and half peppered. Very happy with how it came out! 20240311_190328.jpg20240311_190411.jpgTook around 2 hours in the smoker 175-200 degrees.

Anyone got a favorite jerkey recipe or any tips? I'll be doing this againšŸ˜

I'm partial to Hatch green chili jerky. I used to buy it in very thin flat sheets. Hot and salty, not sweet. Trader Joe's sells a shaker can of Hatch red and green chile flakes that might make a good base.

I was always a big fan of huckleberry with venison. Fresh berries are best, but preserves or syrup will work.
Marinade:
Huckleberries
Brown sugar if using fresh berries
Soy sauce
Red pepper flakes
Onion powder
Garlic powder
Salt
Water
Adjust seasoning to taste.
Marinate overnight in fridge, blot dry, and smoke.
