These Blue-fin processing videos on this channel! I mean, precision with that big-ass cleaver? I mean sure, it's probably sharper than anything I own...

 
Wow! Cutting through sashimi grade Blue Fin with a razor sharp knife. I love to do that. Sometimes it's as if I am cutting through a translucent gem stone. I've personally "cleaned" thousands of tuna. However the guys that do this for a living, for years on end, are quite skilled. They can take a 40 pound Halibut and perfectly "process" it in a surprisingly short time. A sharp (as hell) filet knife is something that I was forced to acquire (and keep sharp as hell.) This lead me down the rabbit hole of "knife sharpening". These days (with you tube) anyone can sharpen the knives, they have, to their greatest potential. Expensive stones work great, but much time and practice is needed. Currently, I like the "workshop" options. Fast, fun and with a little practice....very sharp knives. After that, I use honing steels (steel then ceramic ) IMHO that is the key to an extremely sharp blade.

I'd be missing a few digits & maybe an arm.
 
I always enjoy watching vids of people cutting fish. For stuff I'm familiar with its cool to see how other people do it. I'm definitely familiar with tuna, but not quite of this size lol

I also always enjoy watching people who are skilled with a blade. I've always thought those really long blades they use are super cool.
 
yeah, those really long ones are crazy. Pretty incredible just watching them go to work with such precision with those big knives.

Watching the processing on the way in, is one of many cool things about a tuna fly trip with you. I always try to snag one of the outdoor seats for that.

I too find it satisfying to watch a good fish fileting job.
 
I like how they hold the chunks up like they are bragging. The meat on the bones is great to make tuna burgers with. We scrape them with a spoon and then mix with onions peppers breadcrumbs, etc.
Crazy to think bluefins were thought to be too oily at first so they used them for cat food.
 
Bragging? We're on a fishing site, which by it's very nature encourages photos of our exploits.
