I put shredded kale in a gallon ziplock bag with olive oil, lemon juice, and salt and massage it and let it sit for at least an hour. It becomes very tender. Then I use it as the base of a salad with sliced almonds and craizins (or if I'm feeling fancy, pomegranate seeds), and parmesan cheese.

Sounds good… dried cranberries are a go to with chopped walnuts chopped olives and chopped walnut. I had an “empty dijon mustard squeeze bottle added a T of avacado oil a bit of rice vinegar and several T of water shake and salad dressing… great on a multi green salad of torn romaine fresh kale and Dutch corn salad with the above ingredients each a different bite. We are eating tossed salad creations almost daily

Tuscan/lacinato kale is out favorite to grow. We have it year round, mostly in salads pretreatment with heat or acid it's required. I mostly opt for salting and lemon juice with a quick massage then let it rest for half an hour before finishing the salad prep. In winter we really like it with roasted butternut squash, pepitas, feta, dried cherries, and honey Dijon vinaigrette.

I’m growing an Amaranths dread lock
I have about 12 ounces of amaranth seed/ aka love lies bleeding sort… when i harvested the seeds i got some dollar store panty hose and cut the legs off using them to pull over the huge blooms and rubber band the base of the stems and hung about 8 4-5’ long stems in the shop until they dried. Then crushed them in the hose legs so the seed would collect in the bottom of the hose. Tried winnowing the seed from chaff but ended up using a large fine sieve to do that. My experiments with amaranth go back to the 80’s…harvesting is too much work…. ;)

I like the plant, and grow the burgandy/red leaf variety a local farm grows.
Not growing it for the seeds...too much work.

Got my catch all corner kind of put back together. In the past few years, I’ve had multiple trucks run over it. Two to the point they had to be towed out of the ditch. Never received a note from anyone like “ hey, sorry we damaged your property.
Not sure what I’ll end up plant in there as it can’t get too big or it will block the view for cars turning the corner.
May just level it out and cover it with beauty bark and grow some tomatoes in pots on it for this summer as it gets sun all day. I’m pretty sure it will get run over again.
