I concur!Upon eating a collar fresh off the smoker I am reminded why I bothered. They are fatty and delicious.

No I would say that one is quite ripe. The hens ripen up differently than the males. I hope you are being very generous with brine and smoke timeThis girl was still pretty damn fresh hanging out where I was looking for coho. Since the wife insists I never catch fish and doesn't believe I actually go fishing I brought her home for some smoking experiments. After last weekends rain there was a ton of humpies in the creeks spawning. Saw a lot of main river spawners too. Some giant dead chinook out there as well.

The meat was nearly white mush by filet time.
Unfortunately iβm not sure sure it will hit the brineβ¦.might just be crab bait or dog food
Its a pretty salty brine. Like 2:1 brown sugar to salt. Either way it wasn't mushy but definitely not ocean fresh. Carcass will feed the crabs well either way.No I would say that one is quite ripe.
