Awesome! I used to roll my own but then the ladies at the local Asian market deemed me worthy of a few insider secrets and showed me the tiny fridge in the back with the "halmeoni-made" kimchi. Tough to beat at $8/quart, ready-to-eat

I have defied death from an angry Korean mother after absconding with a gallon jar of kimchi from our garage refrigerator...usually the cucumber one with home grown cukes, layered with steamed octopus that I had speared...this act required I spend a couple days at my fishing buddies house while we consumed the jar with freshly caught or speared fish and rice until my mom cooled off.

I've never met my halmeoni on my mom's side of the family...they all lived far north of the 38th parallel, and my mom was the only one to survive the war...

This is my first time of trying to make hot sauces the fermentation time is long but I’m trying to make some use of the Carolina reaper. I put two reapers about the size of you thumb nail, and added three sweet chilis about the size of the one shown in the pic attached
