Not picking on you in particular, but just wondering if these long streamers with short hooks produce a lot of short strikes?

Nope not picking! That’s a good question. I’ve yet to fish these so I don’t know. This is a 1/0 3x long hook. I have fished a lot of flies I’ve tied with the same front hook with a size smaller tied to the back. They’re a little bit longer in general but the fish still almost always eat the front hook. I think I’ve read somewhere that predator fish almost always go after the head? Not sure if that’s true though.

very rarely an issue for larger predators.

As mentioned in the next post, they often go for the head. In addition, they'll often t-bone it which is why many truly large streamers will have a hook somewhere in the middle. That said, a 7" fly will become completely engulfed in a largemouth's mouth or even a larger smallies mouth. Fish hooked on a trailer hook at the tail aren't eaters, they're curious.....how many fish eat their prey tail first? none.
 
Something mid-sized with bull trout in mind. 1/0 in the rear and 2/0 up front. Tied in that Yardsale type pattern as shown prior.

That red for the gills is perfect. Subtle but I bet it pops when its wet
I hope so....copic markers are a wonderful thing! I can always add to it.
