What's in your (PIZZA) oven?

This summer hasn't been super pizza-y, but I have an out of town friend passing through this week with his wife and 3 kids, so will be firing the oven up. Poolish starts tonight.

Not pizza-y for me either….and thus the fail. Well, the poolish was fine it was my old man memory that failed🤪

I’ll be trying again this week.

Have fun with your friends and Trust the Force, Evan…the poolish will be fineIMG_8813.jpeg

Welp had a ton of tomatoes in the garden I needed to figure out what to do with. So I skinned them, ran them through the foodmill, cooked em down a bit, then canned. Got a half dozen pint jars with my own sauce.

I'd been making sauce out of Bianco Dinapoli canned tomatoes and love it, but excited to make some with my own. Tested some out on some toasted baguette and very happy with the results. Now I need to figure out the next pizza night.

Forgot to document my last couple pizza gatherings.

Today our son (my stepson) had friends over for his 17th bday. Here's what I made for em. All his requests.

(terrible pics of all of em)

Meat lovers - sandwich pepperoni, calibrese, Italian sausage and bacon.

Garlic chicken - I made a ricotta cheese spread with garlic and olive oil for the sauce.

Chipotle chicken - mixed in some of my recently made smoked hot sauce with the pizza sauce.

Now for something completely different. Perhaps crossing the line into "crime against pizza." I'll let the jury decide.

Had leftover sauce, cheese and pickled biquinho peppers in the fridge. Put them on an English muffin for lunch.

There's a pizza spot in Reno that punches above its weight for Reno, called Cosmo's. They have a pizza named salad days which is Calabrian chili based w/ mozzarella and finished with arugula- very tasty. I found the ingredient that unlocked the at home recipe in the grocery store the other day.

For the first draft I just used pecorino romano, and added mozzarella on the second draft.
